Soluble soybeanpolysaccharide(SSPS) is a water-soluble polysaccharide extracted and refined from soybean. SSPS consists mainly of the dietary fibre of the soybeancotyledonand has relatively low viscosity and high stability in an aqueous solution. SSPS has various functions such as dispersion, stabilization,emulsification, and adhesion. Therefore, SSPS can be used not only as a dietary raw material for fibre-fortified food, but also for pharmaceutical and industrial applications as well as for many other food applications.
