A variety of foods and human body contain glutamate, which is one of the structural amino acids of proteins or peptides, and free amino acids, L-glutamic acid is more delicious. Glutamic acid was discovered by Risothson in 1856. It is colorless crystal, with fresh Chemicalbook flavor, slightly soluble in water, but soluble in hydrochloric acid solution, isoelectric point 3.22. It's found in large quantities in cereal proteins and in the brains of animals. Glutamate plays an important role in protein metabolism and is involved in many important chemical reactions in animals, plants and microorganisms.
